  • 6 slices bacon, chopped
  • 1 medium onion, chopped (about 1/2 cup)
  • 1 can (10 1/2 ounces) Campbell’s® Condensed Cream of Mushroom Soup or 98% Fat Free Cream of Mushroom Soup
  • 3/4 cup sour cream
  • 6 tablespoons butter, melted (amount divided in recipe steps below)
  • 6 cups frozen shredded hash brown potatoes (about 22 ounces), thawed
  • 3 cups broccoli florets
  • 1/3 cup sliced green onion
  • 1 1/2 cups shredded Cheddar cheese  (about 6 ounces)
  • 1/3 cup panko


  • Step 1

    Heat the oven to 350°F.  While the oven is heating, cook the bacon and onion in a 10-inch skillet over medium heat until the bacon is crisp.  Spoon off any fat.

  • Step 2

    Stir the bacon mixture, soup, sour cream, 4 tablespoons butter, potatoes, broccoli, green onion and cheese in a large bowl.  Season the mixture with salt and pepper.  Stir the panko and remaining butter in a small bowl.  Spoon the potato mixture into a lightly greased 9x9x2-inch baking dish.  Sprinkle with the panko mixture.

  • Step 3

    Bake for 45 minutes or until the mixture is hot and the panko mixture is golden brown.

    Must try recipe! This bacon hash cass has just become part of our meal rotation. My family loved every last bite. We, of course, added more bacon because we could. I am always amazed by what you can do with condensed soup...soooo good.

    Excellent. I used bacon and shrimp. No complaints and as for the nutritional information someone else posted, who cares. I don’t make things like this for nutrition, it’s fun/comfort food.

    I added extra bacon and onion as well. Because I wanted to use the little bit of sour cream and cheese I had left, I added some extra of those too. I cooked the bacon and onion seperately. I cooked the bacon and crumbled it. Then I added the onion to the bacon grease in the pan and cooked it until crisp tender using a slotted spoon to remove it so the fat could drip off (either way I didn't want to overcook the onion). I used store bought fresh shredded potatoes (Simply Potatoes). I doubled the topping. It does take longer than the time listed though by like 30 minutes. (You also might have to cover the top half way through with some aluminium foil so it won't over- brown the topping, which I had too). I'm a foodie and have been cooking for 35 years so I'm a pretty good cook and I'm used to good food. I was surprised at how tasty this was. I saw the commercial for it and thought meh! But the ingredients sounded really good so when I needed a kinda quickie recipe I thought about this. I really didn't think it would turn out to be much. My family loved it. The thing is, you can add grilled chicken, pork, hamburger, ground Italian sausaage to this recip to make it a more rounded protein dish. I see this recipe as a great side dish or even a main dish for us in the future. My family LOVED this dish! I will definitely be making it many times in our future. I needed a 13 x 9 inch casserole dish though. I did add extra stuff but not that much so I was suprised that I needed a bigger dish. All I can say is YUM!!! The fam all gave a two thumbs up!

    The nutritional information would be a lot more helpful if you told us how large a serving is. Is it 2 Tablespoons? Half a cup? Whole cup? I've looked at a number of recipes and cannot find a mention of serving size. The recipe was really yummy. I added cooked chicken to it to make it a meal.

  • Easy cooking for inexperienced single male

    I’ve made this dish several times now and it’s come out great each time. I am a 60 year old inexperienced single male cook who hasn’t had to make his own meals. I’ve eaten out frequently or bought frozen meals. Eating out is expensive & I really don’t like the texture & quality of microwave food. I hate chicken, seafood & eggs. Most would say I’m a picky eater. So lately I’m teaching myself to cook. The prep & baking time has been longer than I expected. I’m tired of frozen hash browns so I’ve peeled and chopped my own potatoes which I’m sure has increased the prep time. I was also concerned about the can of Cream Of Mushroom soup with out adding water but I guess that’s where most of the flavor comes from. In the last batch I forgot to lightly salt the potatoes which hurt the flavor a bit. Don’t skimp on the broccoli, bacon or cheese. The broccoli adds nutrition & color, bacon yum flavor & color. And gooey cheese adds the “I want some of that” human response (i.e. Pavlov’s Dogs). This recipe easily feeds 4 adults (as a side or main dish), possibly 6. Easily feeds a family of 2 adults & 2-4 kids.
