Why do we never think frittata when we think one-dish meal?  It cooks quickly, it's budget-friendly and easily customizable.  This Cheddar Broccoli Frittata tastes great and is easy, too!  Just saute some veggies, then pour a mixture of condensed broccoli cheese soup and eggs over the top.  Let it cook for a minute or two, then quickly broil- 25 minutes, start to finish!  You can also use whatever vegetables you have on hand, just keep the amounts and cut sizes the same so they cook in the same amount of time.  You can also bake the mixture in a mini muffin-pan, for egg bites that look great on a brunch board!  Or make a batch to freeze for a prep-ahead breakfast!

  • 9 egg
  • 1 can (10 1/2 ounces) Campbell’s® Condensed Broccoli Cheese Soup or 98% Fat Free Broccoli Cheese Soup
  • 1 tablespoon butter
  • 3 ounces mushrooms, coarsely chopped (about 1 cup)
  • 1 large yellow onion, chopped (about 1 cup)
  • 1 small zucchini, coarsely chopped (about 1 cup)
  • 1/2 cup shredded Cheddar cheese
  • 3 green onion, chopped

  • Tips

    • For Cheddar Broccoli Egg Bites, heat the oven to 350°F.  Spray 36 (1 3/4-inch) mini muffin-pan cups with cooking spray.  Divide the vegetable mixture among the muffin-pan cups.  Spoon the egg mixture over the vegetable mixture, and sprinkle with the cheese and green onions.  Bake for 20 minutes or until set and beginning to brown.  Let cool in the pan on a wire-rack before serving.
  • Step 1

    Beat the eggs and soup in a medium bowl with a fork or whisk.  Season with salt and pepper.

  • Step 2

    Heat the butter in a 12-inch ovenproof nonstick skillet over medium heat. Add the mushrooms, yellow onion and zucchini and cook until tender. Stir in the egg mixture. Reduce the heat to low.  Cook for 5 minutes or until the egg mixture is almost set but still moist.

  • Step 3

    Heat the broiler. Sprinkle the cheese over the egg mixture.  Broil the frittata with the top 4 inches from the heat for 2 minutes or until the top is golden brown. Sprinkle with the green onions before serving.

    The dish is good, but too many calories. too high in the cholesterol area and fats.

    I loved this dish. Just a few tips tho, you can pretty much customize the ingredients with what you want. I made it as the recipe called, but next time I plan on using potatoes, onions, mushrooms, smoked cheddar, pepper and maybe a pinch of garlic. I would also sub the broccoli cheese soup with cheddar cheese soup.

    Also, it says 5 minutes in the pan to let it set, and it was realistically about 15 minutes on low, if not longer. Once you put it in the oven for a few minutes though, it toughens up.

    My fiance and I ate it with hot sauce. I loved it. I brought it to work this morning and ate it on toast. So good!! I will definitely making this again and experimenting with different flavors.

    My family enjoyed the dish. It took the eggs 15 minutes instead of 5 minutes to set. We will definitely have it again!

    My family enjoyed this frittata. Even my eight year old daughter liked it but she picked out the mushrooms. I omitted the zucchini and added chopped ham instead. I only gave 4 stars because my eggs took 12 mins to set instead of the 5 in the recipe.

    I would definitely make this dish again! A real hit with family members, especially my niece who doesn't like vegetables.
